DI(Why): It’s Spring Break!
The kids are home from school. There’s a wintery mix falling that’s not much fun to play in, so I needed a plan to curb the brother-sister brawling. It’s technically spring. The birds are singing despite the weird precipitation. Bird nests it is!
There are so many fun edible nest recipes, but I wanted to add as many “healthy” ingredients as I could. Let’s be honest, Easter is second only to Halloween when it comes to syrupy sweets. As it should be…in moderation.
I decided on a little kitchen experimenting. I gathered the following nesty ingredients:
- Shredded Wheat Biscuits
- Unsweetened Coconut Flakes
- Semi-sweet morsels–melted
- Peanut Butter (substitute any nut or seed butter you like or add Nutella)
First I had the kids whack the heck out of the shredded wheat while it was still in its sleeves (hands-down their favorite part). Better the shredded wheat than each other.
We added six biscuits to a bowl. To that we added 3/4 of a cup of unsweetened coconut flakes. Noah and Chloe mixed it and smelled it and probably coughed into it a few times (we’ll call that the secret ingredient).
Half a cup of oats were next. “Oh! This looks like bird nest stuff!” squealed Chlo. We were on the right track.
And their favorite ingredient: semi-sweet morsels (I used about 3/4 of a bag). I don’t do the double boiler method. I just pop those bad boys into a glass measuring cup and microwave them in 15 second intervals, stirring between each interval, until they’re melted.
For a little something extra and because I am in LOVE with peanut butter, we added three-ish tablespoons of PB to the melted chocolate and stirred it all together until it became nectar for the gods.
We dumped the melty goodness into the nesty twigs and mixed. Hands are best as long as the chocolate is cool enough. This is not a science. You only need as much chocolate peanut butter yum as is necessary to make the mixture a sticky, delicious mess.
Little fingers pressed the concoction into sprayed cupcake tins and right before our eyes, we had little bird’s nests.
I let them rest in the tins so the chocolate could begin to harden a bit, but you can eat them in ooey gooey mess form, too.
“But what about the eggs, mom? We can’t have nests without eggs!” Truer words have never been spoken. I turned to Smashed Peas and Carrots for my inspiration. This fabulous woman shared a recipe for “No-Bake Energy Bites” that will probably become illegal soon because they are just too good. My kids love them. My husband loves them. I love them. Win. Win. Win.
We turned the energy bites into adorable little eggs for our nests.
- Honey (prefer Agave or maple syrup? try those!)
- Flax seed (those fancy chia seeds would probably work, too)
- Peanut Butter (or any nut butter)
- Unsweetened Coconut Flakes (substitute shredded wheat if you prefer)
- Chocolate Chips (we–I mean, I–opted against those this time. You could also use raisins or dried cranberries)

Not your bag? Too sweet? You can fill your nests with ice cream or berries or yogurt. Delicious and fun and not a DIY disaster.
